As a passionate home cook and food enthusiast, I had the privilege of sitting down with my good friend chef William Dubois to discuss all things cooking. Chef Dubois has been in the culinary industry for over 20 years and has worked in some of the top restaurants in North America. He has a wealth of knowledge and experience to share, and I was eager to pick his brain about what it takes to be a successful cook.

Chef Dubois: I've always had a love for food and cooking, and it just seemed like the natural path for me. I started as a dishwasher in a local restaurant and worked my way up through the ranks. It was a lot of hard work, but I loved every minute of it.

 

That's amazing! What are some key skills that aspiring chefs should focus on developing in order to be successful in the kitchen?

Chef Dubois: I think the most important skills for a chef are a strong understanding of ingredients and techniques, the ability to work well under pressure, and a never-ending desire to learn and grow. It's also important to have a good palate and a sense of taste, as well as a good palate for pairing flavors.

 

Those are definitely important skills. What are some common mistakes that novice cooks make, and how can they avoid them?

Chef Dubois: One of the biggest mistakes novice cooks make is not seasoning their food properly. It's also common for people to not cook their ingredients properly, either overcooking or undercooking them. My advice is to always taste your food as you go and make adjustments as needed. Also, don't be afraid to try new ingredients and techniques. You never know what you'll discover!

What advice do you have for someone who is just starting out in the kitchen and wants to improve their cooking skills?

Chef Dubois: My advice would be to start simple and work your way up. Make sure to use fresh ingredients and to season your food properly. Don't be afraid to make mistakes, as that's how you learn. And most importantly, have fun and enjoy the process!

How do you stay inspired and continue to create new and exciting dishes, and what do you do to continue learning and growing as a chef?

Chef Dubois: I'm constantly inspired by new ingredients, cooking techniques, and cuisines from around the world. I travel as much as I can, trying new foods and learning from other chefs. I'm also always experimenting with new ingredients and flavors in the kitchen. I believe that the key to growth as a chef is to never stop learning and always be open to new ideas.

Chef Dubois: Cooking classes and workshops are a great way to learn new techniques and pick up tips and tricks from experienced chefs. I recommend taking a variety of classes, from basic knife skills to more advanced techniques like pastry making. Online resources, such as cooking blogs and YouTube channels, are also great ways to learn and stay inspired.

 

That's great advice. What are some of the biggest trends in the culinary world right now, and how do you see the field evolving in the years to come?

Chef Dubois: Currently, the biggest trend in the culinary world is a focus on using fresh, local, and seasonal ingredients. There's also a growing emphasis on plant-based and vegetarian cooking, as well as on sustainable and ethical food practices. I think that these trends will continue to grow in importance, and I see the culinary field becoming even more innovative and creative in the years to come.
